I bought a full bag and Quinoa and I am using that often now. Just to manage my PCOD, I am continuously avoiding rice. To have a feel of not missing rice, I am including more and more Brown Rice, Samai and Quinoa. Quinoa can be cooked so so quick. Also it is easy to make many variety of Indian Style Quinoa Recipes.

Quinoa Pulao Recipe

This Quinoa Peas Pulao is made in the same way I follow for regular Peas Pulao. No much difference. As the preparation time is less, it can be taken as a lunch box menu to office. It is one the best recipes to include in Indian diet lunch menu. I mean your Indian style real weight loss menu can have this Quinoa Peas Pulao. You will never have a feel of missing Rice.

Ingredients
Whole Spices
  • 1 Bay Leaf
  • small stick of Cinnamon
  • 2 cardamom
  • 2 cloves
Main Ingredients
  • 1 cup Quinoa
  • 1/2 cup fresh green peas
  • 1 tsp ghee
  • 1/2 onion
  • 1 tsp ginger garlic paste
  • 2 green chillies
  • handful of chopped coriander leaves
  • handful of chopped mint leaves
  • salt for taste
Quick Procedure
  • Wash and drain quinoa. Wash and clean green peas. Finely chop onion. Finely chop coriander leaves and mint leaves.
  • Heat ghee in a pressure cooker. Add all the whole spices. Saute till they release a nice aroma.
  • Add onion and green chillies. Saute till onion becomes soft and transparent. Add ginger garlic paste and saute till the raw smell goes off.
  • Add quinoa and saute for few minutes. Add 1 and half cup of water, required salt, green peas, chopped mint and coriander leaves. Pressure cook for 3 whistles in medium flame.
  • Open the lid after the pressure decreases. Spread the pulao on a plate for few minutes and then serve it hot.
Notes and Tips
  • First note down the Quinoa:Water ratio for this Pulao. For 1 cup of Quinoa, use 1.5 cups of water.
  • Soak Quinoa for 10 minutes to improve the texture.
  • As it is fresh peas, it takes less time to get cooked.Add it only at the time of adding water.

Carrot Milkshake Recipe

I like carrot very much. As it is good for eyes, my dad often insists to include in our food diet. During our school days, we used to munch carrots as a snack like rabbits. Donno why but now and all, it is difficult to chew them. Nowadays, we make carrot juices and milkshakes. As you all know, I consume a very limited amount of milk owing to PCOS. So I have used soaked almonds to give a milky texture and taste. Using Almonds gave a nice texture and flavor to this milkshake. It was more tastier.

If you plan to give this to your kid, strain with a medium holed strainer. Adults can drink this even without straining. That is a way healthy.

  • 1 Medium Carrot
  • 10 to 15 Almonds, Soaked
  • 1 or 2 tsp Honey
  • Water

Quick Procedure
  • Chop carrots into small pieces. Soak almonds and remove the skin.
  • Combine carrots, almonds and honey in a blender. Puree it adding very little water.
  • After it became puree, add water and grind once again. Strain it using a strainer, transfer to a vessel and chill it.
  • Pour it in a serving glass. Sprinkle some almonds and serve chill.
Note: It is optional to strain the juice. For full health benefits, you can have it even without straining.

This Thai Coconut Milk Soup can be served as a lunch or dinner. It has all elements to satisfying your hunger. You have chunks of carrot to taste, cubes of fried paneer to munch, whole wheat pasta as a healthy carb and spinach for nutrition. The coconut milk, bay leaf and spices give a nice flavor. Moreover, it is a One Pot Soup Recipe which can be made very easily. If you wish to try some soup of different cuisine, this one is a good choice.

The original recipe calls for adding Thai Green Curry Paste. But I have skipped it, as most of us do not have it at home. I have used only the ingredients available at home. I have used Whole wheat pasta. You can replace with with usual pasta or noodles. I have used Paneer, which you can replace with Tofu. If you are on a weight loss diet, you can try this soup as a wholesome dinner or lunch.

  • A handful of spinach
  • Small piece of paneer/cottage cheese
  • 1/2 cup coconut milk
To Sauté
  • 1 tsp coconut oil
  • Bay leaf
  • 1 tsp minced ginger garlic
  • 1/4 onion finely chopped
  • 2 green chillies
For Flavor
  • A pinch of turmeric powder
  • 1/2 tsp curry powder
  • Salt

Quick Procedure
  • Chop all the vegetables and make it ready.
  • Heat a pan and add coconut oil. Add the ingredients given for sauté. Sauté for 2 minutes or till the onion becomes soft.
  • Add carrots and spinach and sauté till the raw smell goes off. Add pasta, the masala powder and salt. Sauté once or twice.
  • Add coconut milk and water. Cover and cook till the vegetables become soft. The soup is ready.
  • Heat some oil in a pan. Add paneer cubes and sauté till they turn brown. Add this to the top of soup. Serve it hot.
