Being a foodie, writing about food will be the more interesting thing. FOOD  is the mirror of a community or locality's history, cultivation, culture, landscape and climate. If we dig more into this topic, we could definitely learn a lot about basic geography around the world. Just because of my interest over different variety of foods, I am gonna start this series. I think this will be a lengthy series. I love food. Let us see how this goes. If you are also a foodie like me, catch up this series. Hope it will be interesting :)

Last week, we had an excellent vacation. A trip to ORLANDO and MIAMI. It was something my husband planned for my kiddo. He thought she will enjoy the trip more than us. Of course, the same happened. She enjoyed much in Disney World. As per my husband's plan, the creamy layer of my interest is the countries they modelled in EPCOT.

EPCOT was really amazing. Although it was really a long walk, I enjoyed. Cheers !! Stepping into different countries, whenever you take 100 steps. I loved it much and more. What inspired me more was the food station they had. It was like a trip to food stations around the world. Because of time restriction and our tummy resisting various tastes at the same time, we were not able to taste everything. But overall, it was a nice experience.

I would say that the food stations intrigued me to write this post. Yep, I thought of learning about various cuisines around the world. But that is what I usually do getting into the libraries. I thought for a while. How this could be related to my blog ? I made up my mind to write about the healthy food practises around the world.

It will also get into some minor details with their culture, cultivation, staple food, method of cooking, oil they use, health concerns they have or take while cooking, etc.. Probably this health concern behind their food might be the reason behind their healthy or oblique physique. Let us see how far this series go.

As of now this is my plan. Starting my visit from some point in this map and proceeding, wherever my arrow goes. Most of the facts will be based on the facts I collect from internet and books I read. Comment me, question me or just argue with me, through your comments.

Winter becomes awesome with soups. Having soups and salads really make weight loss faster. One whole bowl of soup was completely enough to have it as a lunch. 

Soups with very less oil and salads with low fat dressing are in my menu for weight loss lunch and dinner. This sweet potato soup is my recent favorite thing. This sweet potato soup is in southwest style.

Ingredients
  • 2 tsp coconut oil
  • 1/2 tsp cumin or seerakam
  • 1/2 medium size onion
  • 1 sweet potato
  • 3 garlic cloves
  • 1/2 tsp chilli powder
  • 1 tsp lemon juice
  • Salt

Quick Procedure
  • Heat coconut oil in a pan. Add cumin seeds and let them sputter.
  • Add onion and toss it for a few minutes. Then add chopped sweet potatoes. Sauté for 5 minutes.
  • Add chilli powder and sauté once or twice.
  • Add 2 cups of water and cover it. Cook till sweet potatoes becomes soft.
  • After they got cooked, cool them down. Reserve 1/4 portion and take the rest in a mixer jar. Purée it.
  • Again heat very little oil in a pan. Add crushed garlic. Add the cooked sweet potatoes and the purée.
  • Add salt and bring them to boil. Squeeze lemon juice. We are done.

arabian beetroot salad

Recently I had this beet salad in an Arabian restaurant. The taste really haunted me. I would say it is one if the best salads, I have ever had. I loved the taste very much. It had all elements of taste. The color, texture and flavor, everything were amazing. 

It could make a complete lunch along with a few pita chips or rotis. It is also more and more healthy. It is rich in iron content. It makes a complete balanced diet. I wish you a happy happy weight loss with this tasty salad. Tangy and filling.

Ingredients
  • 1 small beetroot
  • 1/4 cup soaked chickpeas
  • 1/4 medium size onion
  • 1/4 cup thick curd or sour cream
  • Salt and pepper
  • 1/8 tsp sesame seeds
  • Little dill leaves

Quick Procedure
  • Slice beetroots. Cook beetroot and chickpeas adding little salt.
  • Strain water and cool down the vegetables.
  • Heat some coconut oil and add sliced onions. Sauté till they become transparent.
  • Add this onions to the cooled vegetables. 
  • Add curd and mix well.
  • Season with salt and pepper.
  • Sprinkle chopped dill leaves and sesame seeds, at the time of serving.

Stepwise Pictures
Slice beetroots. Boil water. Add beetroot and chick peas.

Cook till beetroot becomes soft. Add little salt and strain water.  Cool down the vegetables.

Heat a pan. Add coconut oil. Add sliced onions and sauté till they become transparent. Add this onions to the cooked and cooked beetroot.

Add curd. Mix well. Add salt and pepper powder, as per your taste.

mexican breakfast wrap

It is very easy to make this wrap. Just an omelette, roti and guacamole to make this wrap. but the taste will be awesome. It is very very healthy too. Adding little beans and sweet corn will make it a complete mexican style breakfast wrap. I already told that I am not a great fan of corn. So I just skipped it. Still the taste is awesome. I hope you too would like it. It will also be good to look at. The appearance will give you the feel that you has a very complete and tasty breakfast.

This is one of the simple breakfast wrap recipes. What is the speciality of a breakfast ? You need something to give you more energy. You need something simple to make. You need something light to eat. At times, we get bored of our regular breakfast. This type of wraps come in at that case. Even if you need to make more number of servings, it is very very easy to make these wraps. It has avocados for good fat, healthy vegetables and potatoes, the breakfast energy busters. You could add a little sweet corn, if you have. I don't like sweet corn. So I have skipped them.

Some of my viewers asked me to post a few mexican style dishes. Including avocado has been their goal and they think making mexican dishes is the better way. Seems like they have tried some of the mexican dishes in nearby malls. As mexican dishes use some spices, Indian tastebuds love the flavor. If you try mexican dishes for the first time, you could not be able to feel the taste fully. Might be the combination or kind of side dishes. We need everything in right combination to make a delicious meal. Guacamole is very simple among mexican sides. It is also very easy to make. You could add a scoop of guacamole in soups, wraps, burritos, tacos or rice bowls. It goes well with anything in the above list. I could get your question. In what way it is healthy ?

Avocados are rich in good fats. As we have already discusses earlier, we need more good fats to fight with and reduce cholesterol or bad fat. Avocados do the favor. They have plenty of good fats. They are especially good for women. It has a few more health benefits like folate, vitamin K, B, B6 and C, copper and magnesium. It is like a small ball of full health. This guacamole is the simplest spicy side dish using this healthy bomb avocado.

Ingredients
  • 1 ripen Avocado
  • 1 tblspn finelly chopped onion
  • 1 tblspn finelly chopped tomato
  • 1 tblspn finelly chopped capsicum
  • 1 lemon wedge (1/4 lemon)
  • little salt or kosher salt
  • 1 tblspn finelly chopped coriander leaves

Quick Procedure
  • Take ripen avocado. It will be black in colour and soft to press.
  • Cut lengthwise. Twist and open. You will get two equal halves.
  • Remove the large ball like seed. Scoop out the soft flesh using a spoon. Collect it in a bowl and mash it well.
  • Add finelly chopped tomato, capsicum and onions to this mashed avocado.
  • Squeeze a lemon wedge.(1/4th of a lemon). Add salt and mix well.
  • Finally, sprinkle some coriander leaves.We are ready with the guacamole.
